32 Days until we've been Paleo/Crossfit for 1 year...

Tomorrow morning is our big segment on WishTV Channel 8 out of Indianapolis.  Mr. and I are both excited to see how they pulled everything together.  Because I wrote a special post for viewers checking us out from Channel 8 I won't be blogging until Saturday or Sunday.  I will however be sharing on Facebook so make sure to like Food is a Drug #Paleo . Meal Plan Monday Today was a busy meal planning/shopping day.  I also made some home made Paleo Mayo as we had pork burgers tonight and I am planning on having those bacon stuffed burgers on the 4th.  If you 've never made your own mayo, I highly recommend it.  Look online for a recipe.  The homemade version tastes so much better and has no additives etc!  The recipe I use has egg, lemon juice, dry mustard, garlic salt, and light olive oil. Dinner was odds and ends that I was able to pull together to make delicious.  I forgot to thaw my roast last night to throw in the crock pot this morning so I had to come up with

33 Days until we've been Paleo/Crossfit for 1 year PLUS our garden update!

I went to bed on time last night!  I didn't have too much trouble falling asleep however I didn't get up on time.  Have I mentioned how much I love to sleep?!?  Seriously, I haven't slept that much in a long time but I had 11 hours under my belt.  My plan for the morning is to wake up during my normal Crossfit time in the morning and head out for a run AND I will be headed to bed again tonight at 10 p.m. with hopes to be asleep by 10:30 p.m. I have no pictures of my food from today.  Breakfast was eggs and avocado.  Lunch was leftover grilled chicken thigh and tomato watermelon salad.  Snack was carrots with 1/2 avocado and a handful of blueberries and grapes.  Dinner was at my mom's and was taco salad, guacamole and peppers, Paleo style doritos, and Mexican cake (fabulous!!!). Remember when we planted this garden? We've recently been able to harvest a few things.  A couple of cucumbers and a tomato so far.  We are really close to harvesting sugar snap pea

34 days until we've been Crossfit/Paleo 1 year...getting back into better sleeping habits.

Have you ever had a day that you eat breakfast so late that you skip lunch?  That was me today and it's been a long time since I've slept in as long as I did today. Breakfast Dinner: Bacon stuffed burgers with tomato-watermelon salad I ate well today but my sleeping habits have been pretty horrible lately.  I have been trying to give myself a little bit of slack because it is summer time.   When I started Paleo/Crossfit almost a year ago, I was a wore out tired girl.  I'd start my day at 5:05 for a 5:30 workout.  I was going 3-4 days a week.  I'd come home, shower, and work until 4 ish.  I then would head home and fix dinner and shuttle the boys to their activities or attend my own evening meetings.  Their bedtime during last school year was between 8-8:30 p.m. and often times I would go to bed after getting them in bed.  It took me about 3-4 weeks before my body adjusted to my new schedule and sugar/carb detox.   Since I've taken the month of Jun

35 Days to go until we've been Paleo/Crossfit for 1 year! PLUS it finally feels like summer!

My boys and I had a fantastic day!  I got to sleep in and they got to do several fun things throughout the day!  It was a win-win!  I started my day off differently than most...I didn't have eggs.  I know shocking right?  I had a couple of bananas that needed to be used today and so I looked up a couple recipes for Paleo banana Pancakes and constructed my own.  A little of this and a little of that and I was consuming this yumminess! I don't have a recipe to share because it was honestly a little of this an a little of that but the end result was fantastic.  I used 2 ripe bananas, 2 eggs, cinnamon, vanilla, honey, dark chocolate, coconut flour and almond flour.  I let it sit for about 4-5 min. while the coconut oil fully melted on the skillet.  Then I just poured about 1/4 cup of batter per pancake. I was able to track my food with phone with pictures today. Breakfast: 2 eggs, 2 slices of bacon, 1/2 avocado, blueberries Lunch Leftovers: Paleo Jambalaya with Roasted Veggies Snack: Leftover Guacamole and carrots Dinner: Emeals Meal And as I promised on Facebook  I am sharing the recipe. This recipe got 2 thumbs up from the entire Smith Household!  So yummy and so easy. When I was at the store getting the pork, I had misread and bought bone in chops.  So for the first time tonight I made bone broth!!!  I've boiled chicken bones before but never slow and for as long as I did tonight.  I've read wonderful things about bone broth and its health benefits.  I'm in the process as we speak of turning the bone broth into soup.  I've added random veggies that I had on hand.  Simmering now is carrots, celery, onion, sweet potato, cauliflower, and the rest of our leftover squash, zucchini, and red pepper).  I am having some dental work done tomo

Our Paleo Emeals Journey...37 Days to go until we've been Paleo/Crossfit for 1 year!

We got to share our story today with Lauren Lowery from WISH TV out of Indianapolis.  She was super friendly and we all seemed to click right away.  Mr. and I both felt we were having a conversation with an old friend about the journey we have been on.  Our segment will air next week and I'm excited to see how it all comes together.  We made Emeals Southwest Guacamole Burgers with grilled red pepper and squash.  It is so delicious!  I will be sharing the recipe next week when the segment airs! Mr. and I have had the opportunity to share our story with the help from Emeals PR firm.  They've really been great about setting everything up.  You would think it would be some difficult and complicated scripted event but it hasn't been at all.  They've really only asked us to share our story and how Emeals has benefited our Paleo lifestyle.  They haven't even provided a Facts Sheet or anything for us to look over.  I think this is great because when we share our

Ready, Set, Go! PLUS an Emeals Recipe Share

We are all set here at The Smith Crib for our WishTV interview tomorrow.  We'll be sharing our Emeals Paleo/Crossfit journey with Channel 8 out of Indianapolis.  The segment isn't scheduled to air until next week.  Mr.'s other segments were at the station.  Having the news crew here at our home brings another whole new element to preparation.  We want Lauren and crew to feel welcome in our home and we want to create a sense of warmth.  We thought we'd welcome them with these: Front Porch Chalkboard Magnet Board under TV in den. We've lived in our home for 2 years and have been remodeling room by room.  We are still working on our Master Bedroom but haven't started yet in our kitchen (saving the best for last).  The rest of our house has been remodeled.  I wish that I had a better kitchen to show off.  Someday!  For now I scrubbed and cleaned our kitchen hoping that it is camera ready. Sharing our Story Again!

Mr. and I are so excited that we get to share our story again.  A news crew out of Indy is headed to our home Wednesday morning to interview and film us cooking!  I'm so excited to continue to share our journey!  Although I am just a little hesitant that they are coming to our home.  Our kitchen and master bedroom are the only rooms in our home that we haven't remodeled yet.  I thought about asking friends if we could use their kitchen but in the end decided that if we were going to be true to our journey...using my own kitchen should be part of that.  1980's decor or bust!  I hope that the camera man and I can have a heart to heart talk about camera angles, etc. We plan on using our grill to make Southwest Guacamole Burgers with grilled squash and red pepper.  (I hope the weather cooperates). We also updated our photos this weekend as well as taking Crossfit Video to submit with our story.  I love looking at these side by side.  It helps me appreciate that even tho

Crossfit Article worth the read!

My Paleo Journey has been intertwined with Crossfit.  Although I am taking this month off to recover from a minor injury, I am looking forward to stepping back in the BOX soon!  I don't love Crossfit the same way Mr. does.  However, I do miss my morning peeps and I miss pushing myself when I think I can't. 45 Days to be Paleo/Crossfit for 1 year! Picking myself up and dusting myself off!

Here's a quick list on how not to succeed at following the Paleo diet: 1.  Go away for the weekend and allow no time for grocery shopping as you start out your most hectic week of summer. 2.  Have no meal plan ready to go for the week. 3.  Stay up extra long at night worrying that everything will go o.k. the next day. 4.  Throw a couple ball games in the mix to make sure your schedule is packed to the brim! 5.  Start the week with a messy house/kitchen/undone laundry so your type A personality can not possibly get through the week without stressing out. 6.  Don't exercise. 7.  Give up. Here's a quick list on how I am going to succeed tomorrow: 1.  Go to bed at a reasonable hour tonight.  Even if I can't sleep I can be in bed "resting." 2.  Set my alarm, lay out my clothes, and start the day off with a morning jog. 3.  Eggs, bacon, fruit, coffee in the morning when I get back. 4.  Pack a morning and afternoon Paleo snack. 5.  Carry my Nalgene fill
