So for the next two weeks as I reset my habits and start the cleanse, it may be important for those closest to me to tread very lightly. <br />

I was pretty ill for most of the month of December especially that last week or so. My body is very ready to cleanse and detox and begin the healing process.<br />

The Smith household is having a Paleo Reset starting today. I sort of wish it was as easy as pushing a reset button but unfortunately it is not. We started Saturday by cleaning out the refrigerator and the pantry. We did meal plan and shopping Sunday morning. We stumbled upon a great price on a whole chicken that was antibiotic and additive free. So I cooked it in the Instant Pot Sunday to have protein for the week. After it cooled, I shredded it and put the bones back in with Fish Oil, Carrots, Garlic, and Onion and cooked it for 2 hours to make fresh bone broth. This made 3 mason jars full of broth.<br />

Dr. W knows of how successful we've been with changing to a Paleo Lifestyle. He saw us through it every step of the way last time. So he asked us (individually) what we knew about Intermittent Fasting. Admittedly, Mr. and I knew very little and probably still don't know much but Dr. W assures us he's super impressed with what he's seen come from research and thought we'd be perfect candidates. <br />
<br />
So on August 1st (Actually the 31st of July because it was a Monday), Mr. and I started down this path. Much like the first time I tried paleo I was a little apprehensive. I've spent the last several years coaching others to eat 3 meals and 2-3 snacks per day. I've focused on food so much that I wasn't sure how I was going to slow that train down. I found that 1. It's a lot easier than I thought it would be. and 2. I really like not thinking about food all day.<br />
<br />
So here's how I've been implementing fasting. Monday through Thursday, I eat 2 or 3 meals but only between the hours of 10 a.m.-6 p.m. I've not really needed a snack or anything in between. On Friday, I pull back even more and eat between 2 p.m.-6 p.m. On Saturday it's back to 10-6 p.m. and on Sunday I eat when I wake up but finish by 6 or 6:30 p.m. I drink water all day long. Lots of water but I tend to be a thirsty person. Also when I'm traveling or my schedule changes than I switch fasting days. For instance, last Thursday I had an appointment out of town and didn't return until after 2 p.m. so I just made that my long fasting day.<br />
<br />
I'm going to be really honest and say I'm still learning the benefits. Dr. W talked to us a lot about changes in insulin, weight loss, and gastrointestinal benefits. Mr. and I also found some online videos by paleo people we trust that helped make sense of intermittent fasting.<br />
<br />
The benefits so far include weight loss, sleep pattern regulation, increased energy, increased <a href="http://www.emeals.com/" target="_blank">Emeals</a>sharpness, and decreased inflammation. <br />
<br />
So what am I eating? It's been the regular paleo fare. Here's some examples:<br />

This sort of feels like a picture overload dump but I've been busy the last 20 days. I joined Civilized Caveman's 30 Days to a Better You Challenge. It's just the motivation I needed to start this new journey. I've really struggled staying on Paleo. Lots of outside factors impacted that. But my bodies constant yearn to feel strong and healthy again never went away. I'm grateful to my family and husband and great Integrative Medicine doctor who have been gently pushing me back to the right path. I've spend that last 20 days trying intermittent fasting on for size and it's been really great. </div>

I think it feels much different than how I was used to coach others in regards to eating. Where before I spent a lot of time planning 3 meals and 3 snacks I now eat 2 or 3 times a day and only sometimes snack. I'm a morning workout girl so breakfast always came early to me. It's been an adjustment waiting until 10 a.m or after to begin eating food. Mr. and I both swear by our bullet proof coffee. We feel like it really does fill us up and curb some of the hunger pains. </div>

This is posted on my refrigerator and when I get home from the store before groceries I take a look at our calendar and plan which meals work best for us against our schedule. Then I'll put away groceries based on when we'll use the ingredients. I almost always freeze meat until the night before I need to use it. This is one of my habits that allows us to be successful at meal time. Scheduling in advance leaves little room for error.</div>

<br />Of course Mr. is on this similar journey with me as well. He check in this morning with me to see how I was feeling. I don't feel a ton different yet but noted that I can tell inflammation has gone way down. I also have been sleeping better. I just know that this lifestyle fits me the best. I can say that the intermittent fasting has caused me to think less about food than I once did. I can't put my finger on a moment the injury happened which is frustrating and had me wondering if it was mental. At the beginning of January I opted for an MRI which indeed indicated that I have a 50% torn rotators cuff and my surgeon is pretty certain I have a SLAP tear as well. I was so relieved to know this information but also shocked to hear the recovery after surgery. Last week after scheduling the MRI, I've had 2 weeks to do as much preparation as I can. I've been grinding it out at home and at work so that the transition can go as smooth possible. <br />

At home I've been cleaning, organizing and meal prepping. Luckily Mr. is a phenomenal caretaker and I know that he will do fine but I'm trying to lighten the load for him as much as possible. I plan on doing additional meal prepping this weekend.<br />

Because of my work schedule I'm able to make meals almost nightly so this prep ahead stuff is a little new to me. I started with some of our favorites from the last month or so. To aid my recovery I cooked up some fresh bone broth. After doing this in my crockpot for 48 hours, I'm still amazed that I can cook bone broth in my <a href="http://instantpot.com/" target="_blank">Instant Pot</a> in and hour. Friends often ask me if buying an Instant Pot is worth it. YES!!! Do I use it? This week: Hard boiled eggs, spaghetti squash, bone broth, and chicken and sausage jambalaya. Good investment for your kitchen!</div>

Wednesday's I work 13-14 hours and so you can bet that I almost always use my crock pot on those nights. Otherwise, I try to match up the easier meals for our heavier loads on our calendar. Here's our meal plan for this week. I write out our menu plan on this magnet that's on our fridge. It makes it easier for me to remember to pull meat and thaw from the freezer in advance. Our meal plan and shopping for the week was done Sunday morning before an afternoon of work and basketball. I was running on fumes through the weekend. My work schedule has been too packed. To date I have worked the last 13 of 15 days and that's only because yesterday I decided not to work after a doctors appointment.<br />

I can definitely feel the tension when I over schedule and as a result I had an OFF weekend of eating paleo. At first I was just letting myself slide on Friday but then the weekend got away from me. Monday it was back to 100% Paleo. <br />
<br />
Our meal plan this week is all Emeals recipes for the week. I'm excited to share recipes with you including this one: <a href="http://emeals.com/recipes/recipe-27079-175843" target="_blank">Emeals Paleo Flank Steak with Balsamic Sweet Potato Sauce</a>. I loved this one for the salad more than anything. I can give or take Arugula on most days but there is something about the peppery taste of arugula combined with the sweetness of the apple and bitterness of the dressing that did cartwheels in my mouth. I couldn't wait to have this salad for lunch leftovers and it was REALLY good. The only things I could think to kick it up a notch is to add some bacon. <br />

I had a late night last night making sure my Cubbies clinched the 6th game of the world series but I set my alarm anyway for a quick walk/jog. Then I set my back up alarm just in case I was too tired. I'm not even kidding when I say I woke up at 5:56 a.m. BEFORE my alarm went off. This used to happen and I'm so excited it's back. Lilly (my dog) and I only had about 30 min so it was a quick 2 mile walk/jog. The boys participate at FCA on Wednesday mornings so they get to school and hour early hence my short jog. <br />
<br />
Now that my energy is back, I feel better, and have been moving...I'm ready for my scale to do the same!<br />

It's been a mild fall actually and lots of trees are still green. With the mild weather I've been able to log some miles. Friday 4.5, Saturday 3, and this morning I decided to walk/jog. I'm proud to say that I was able to run the first whole mile without walking. It was a relief for me since I've been a bit of a couch potato throughout the summer and I wasn't sure how I would fare. the rest of my mileage this morning I alternated walk/jog. I'll get better for now I'm just glad I didn't lose it all.<br />
<br />
Today was a bit of a whirlwind. I hosted a meeting this morning which led into a lunch meeting and then got a couple hours of actual work in (with awful internet service). After I picked up the boys from school and brought them home, took one of them back to the dr for an ear infection. Luckily my amazing Mr. put dinner in the crockpot in anticipation this morning of a busy day for me as he travels frequently. So the boys and I are having a roast with carrots, celery and mushrooms for dinner.<br />

I'm frustrated too. I weighed in this morning and was hoping for and expecting a greater number in the weight loss after 2 weeks of effort. I didn't get what I was hoping for but I know that this works and so I'm not giving up. I did have a slight detour yesterday. I got a little stomach bug Sat night into Sunday. I know that I need to work on a better solution to my stomach bug cures but my standard go to is Orange Gatorade. During the day I only got down a banana, larabar, and a couple pieces of popcorn. I sipped on sprite. By the evening my appetite was coming back and I had a full morning of work followed by a equally full morning of basketball spectating...Mr was at a football game with clients the boys and I swung through the fast food place of their choice. I got a baked potato at Arby's and chips for taco bell. I was able to eat the potato and a few bites of chips. This morning I stayed home with a fever but my belly is feeling much better.<br />

I think I'm turning the corner. I felt pretty good all day yesterday and woke up today feeling good too! I'm crossing my fingers because I know that on Day 11 it could be the day where I have detoxed all the crap out. I've done all the work on my end. I've eaten well, taken my vitamins, and drank a ton of water to help with the flush.<br />
<br />
I hadn't forgotten how well I slept when I was all in but I had forgotten how well that sleep felt. I generally struggle with falling asleep at night. It tends to be that I have a hard time on shutting off my brain once my head hits the pillow. Often times I would get back up and do house work or make lists of the things running through my head. When I started Paleo the very first time I was pretty conked out. Back then I would go to bed when I put my kids to bed (8:30) and associated it with early morning workouts. Now I think that part of that cycle is my bodies way of getting into a better sleep cycle. This past 2 weeks I have been staying up later to watch the Cubs games but I'm waking up so much better refreshed.<br />
<br />
When Mr. and I offer our group challenges we always give points for 8+ hours of sleep. There is so much research out there regarding sleep/weight loss/adrenals. It's pretty inspiring to read about. When G & E were in the NICU, they pretty much slept all the time. I remember a nurse explaining to me that the more they slept, the more the grew, healed, etc. Our sleep patterns are important to our bodies and so I believe its important as we heal our guts, flush out the junk, and work on healing.<br />

Last nights dinner was not <a href="http://www.emeal.com/" target="_blank">emeals</a> but worth sharing because it was simple. Mr. and I love to try different foods and we love using <a href="http://www.emeals.com/" target="_blank">emeals</a> because it breaks down our shopping lists and gives us easy step by step instructions to preparing deliciousness. Last night we simply had grilled chicken thighs and roasted broccoli. It was simple and delicious. If you've never roasted broccoli before you are missing out. I tossed it with avocado oil, salt, and pepper and baked it on a baking sheet for about 30 min. at 350. It's my preferred way to eat broccoli now.<br />

Aside from craving chips and a head ache that keeps popping up, I feel I am doing well on nutrition. Last night for supper I made an emeals dinner that was really good. I always love finding recipes that are worth cooking and sharing. My modifications where minor. I did add a bit more seasoning to the soup. A little garlic salt, garlic powder, and Italian seasoning was all it took to give the broth the flavor I was hoping to achieve. I didn't make the zucchini last night as directed either. Mr. was out of town and I don't really enjoy raw zucchini so I roasted ours in the oven with avocado oil. The sweet potato was leftover and so I heated it up as the zucchini was cooking. The soup though will be a keeper at the Smith house. As I've said before Wednesday's are my looong work day and late night so I keep my plans simple. The boys had FCA (Fellowship of Christian Athletes) this morning. They started bright and early at 7:30 a.m at Hardee's. Luckily I was able to pack my bacon and eggs and my bulletproof coffee held me over until I got to work.<br />
<br />
I didn't pack a snack today but when I was out shopping for our snack for tonight's meeting I picked up a banana. An interesting thing crossed my mind. Whenever I used to buy a candy bar or a pop, the cashier generally always asked me if I wanted it left out when bagging. Today when I purchased my banana (only 1) the question was not asked. Interesting.<br />

First to update about how I did at the wedding. This is 'my person' Deanna. She's waited very so patiently to find the soul God intended for her. I'm so happy for her and Nate and can't wait to hear all about their life adventures. So in my post Saturday morning I had everything mapped out. Well, I quickly had to come up with a Plan B. When I came downstairs after getting ready, Mr. told me how beautiful I looked but my kiddo insisted I needed to change. (He will give me a complex some day). I ended up leaving without eating OR packing a single snack or water only my coffee! I of course didn't realize it until I was have way into my 90 min. drive. Luckily I arrived early and good thing too because I needed to stop and get a card. CVS had larabar's on a "deal" 3 for $4.50 so I bought three (2 blueberry, 1 apple pie) along with a bottle of water. On the way to the church I ate 1 lara bar, then on the way to the reception (30 miles away) I had another larabar. Luckily, at the reception they had a vegetables for an appetizer and this was dinner! Success!</div>

I survived my day yesterday. Friday is my day off and so usually my the day is laid back and low key or very busy. Yesterday my day was the later. I started my day off with a long walk with my walking partner Lilly Rose (my dog). Came home and added in squats, sit ups, and pushups. Then the rest of the day was a whirlwind. On crazy days like that I find myself not as hungry. <br />

We tailgated with friends last night. There was lots of yummy food to choose from and lots of drinks to be had. I stuck with my water but did have a handful of the mexican popcorn I had made. It was made with coconut oil and mexican seasoning. I feel o.k. with my decision to have a little.<br />

Today will be another challenging day. I am about to head out to a wedding. For breakfast I had 3 eggs and 1/2 and avocado. I'll have leftover fajitas and caulirice before I leave for the wedding. But I'm not sure what to expect there and it's an hour and a half drive. I'm packing some celery, grapes, and a larabar to be prepared just in case. <br />
<br />
I always find weekends more challenging to eat paleo. The mix of social activities and flexible schedule make planning a little more complicated. I don't find myself stressing over food but at the same time I don't want to put myself in a position to not have an alternative option. <br />
<br />
On a more personal note, I'm so excited to witness my friends wedding today. She's my ministry person. She's my first call when I'm challenged at work or in my faith. I've witnessed her wait patiently and through some pretty horrible blind and not so blind dates to find the person God had intended for her. I'm so excited today that she gets to make her happily ever after come true. It hit me hard yesterday after work. My head HURT! When I got home from work Mr. said, "what is wrong with you?" I looked at him and said "I'm detoxing." Enough said.<br />

I was also too hungry yesterday. We had a yummy protein and fat filled taco salad for dinner. I could have eaten 5 of them. I contemplated making some homemade sweet potato fries but then decided I needed a quick nap. Lucky for me Mr. and the boys had football practice so the house was quiet. I got a solid 45 min nap in and woke up head ache free. I can't remember the last time I took a nap.<br />
<br />
When I woke up I felt 90% better. I was still hungry. Then the boys came home and were looking for their after practice food. Mr and I did our best to steer them clear of the junk that lurks in the pantry. Ultimately, Mr. made them on the stove popcorn. Oh the smell! I didn't cave. Someday once I've detoxed enough, I'll have popcorn again. We make it on the stove with coconut oil or bacon fat. It doesn't really bother me too bad and gets me through some snacky fazes. But I knew if I gave in last night, I'd be letting my withdrawal win. I had a few almonds and that was it.<br />
<br />
I woke up equally as hungry this morning so I made myself a couple extra pieces of bacon and and 1/2 an avocado. For my snack today, I had peppers and celery. For lunch I had leftover pork chop and brussel sprouts. Dinner will be grilled hamburgers with grilled onion and homemade sweet potato fries. I have an apple with me at work since it's my extra long night. My water intake is still going well and I'm visiting the bathroom more than I'd like. ++PLUS++ I remembered to take my vitamins this morning!!! <br />
<br />
So if you're new to paleo, the detox can be the hardest part of people. Our body is used to working on processed junk food, caffeine, and sugar. When you take those things away from it, your body will revolt! I usually get headaches, am very tired, and cranky. The thing that keeps me going is knowing it will get better. I remember the very first time I detoxed. I was going to bed at 8 p.m. as soon as I tucked in the boys. I thought I'd never make it! After a week or 2, I turned a corner and felt so much better. I had more energy and the headaches went away. I'm looking forward to that happening again!<br />

Day 2 and I am SOOO tired of visiting the restroom. I've really focused these last 2 days on making sure I was drinking lots of water. I feel like my body is rejecting it...but I know it's really using it to flush out all the bad. <br />

Last night finished as good as it started. My boys are very busy this week as we wind down one sport and pick up another. Which had them eating a 4th meal after 2 practices. Someday's it's hard to keep food in our house. Unfortunately, after our camping weekend we are too well stocked on junk too. But I'm happy to report that I didn't cave. I didn't even have a snack after our early dinner.<br />
<br />
So this morning I started my day with my 6 a.m. wake up walk, ab work, and stretching. I really thought about hitting my snooze but decided against it (and so happy I did). <br />

I worked so incredibly hard to get my life back. I was working about at 5:30 a.m. Meal planning and cooking like a boss. It worked. <br />
<br />
Then I got pregnant. Then I lost Charlie. Then my life stopped as I knew it.<br />
<br />
I remember telling my mom when I was on bed rest trying to save him. Whatever the outcome was I didn't want to go back to who I was. I wanted to feel strong. I told her to not let me go down a bad road.<br />
<br />
The thing about that is...I didn't at first. After I lost him I stayed true to paleo lifestyle. As soon as I was allowed I was back at Crossfit working out. <br />
<br />
Things started to unravel for me one by one. First was working out. I loved feeling strong and when I went back I quickly realized I wasn't strong anymore. Then people would unknowingly say things that would make me swallow hard. Babies were born healthy...the same month Charlie was due. I saw tired parents working out and to be honest it pissed me off that I got a good nights rest (well with the help of a tylenol pm). <br />
<br />
Then a few changes happened at my gym and words were said or not said and I decided to walk away. I found myself at a new gym. It was warm and welcoming but it wasn't my home. I tried for several months to make it home but never got there. Plus the anxiety set in as I got closer and closer to Charlie's 1st birthday. It was bad. I needed a break and so I walked away from there too.<br />
<br />
During this time I was staying pretty true to paleo. I still stay pretty true to paleo for meals. In between those paleo meals, not so much.<br />
<br />
I've sponsored and participated in challenges to help inspire me to keep going.<br />
<br />
In April I ran my first mini-marathon at a turtles pace. Then pretty much stopped working out all together.<br />
<br />
I've sought spiritual direction.<br />
<br />
I've started over again more times than I care to count.<br />
<br />
I've hosted girls nights and card parties to help get through the months.<br />
<br />
I've been trying so hard to find what my new normal is, should be, will be.<br />
<br />
My sweet mom has whispered so many, don't give up comments (without actually saying "don't give up.) She's worked hard to be the role model that I used to be to others in my nutrition and activity.<br />
<br />
The thing is, it sneaks up on you. I've never intended to go back to who I was before I found a better lifestyle. But I feel gross again. That's the best way I can explain it. I can tell that my body is mad at me in so many different ways. I crave feeling strong again like I never did the first time I walked this journey. <br />
<br />
I don't feel sorry for myself nor do I write this hoping you'll feel sorry for me. I'm more pissed at myself than anything. At one time, my spiritual director kept telling me to be gentle with myself. I probably needed to be at one point but then I started using it as a crutch. <br />
<br />
So here I am...tired again of feeling sick and tired, knowing that I'm the only one that can change me. <br />
Knowing that if I make a few corrections in my nutrition and exercise that I'll be right back on track. <br />
<br />
Knowing that because my heart continues to ache incredibly bad, I'll never feel as good as I did the first time.<br />
<br />
But here's the deal. I want better for my family. I want better for me.<br />
<br />
So this morning I set my alarm and actually woke up. <br />
<br />
My dog and I went for a brisk morning walk. I came home did some core work and stretched. I had eggs and bacon for breakfast, carrots for a snack, leftover soup for lunch, and apple for an afternoon snack and I'll be having pork chops and brussel sprouts for dinner.<br />
<br />
You blog land will be my accountability. <br />
<br />
It will be messy.<br />
<br />
It will be beautiful.<br />
<br />
It will give me accountability.<br />
<br />
I will overcome this.<br />

Yesterday we hosted a Facebook Live event for our paleo challengers. You can find it on my Facebook page: Food is a Drug #Paleo. It was interesting to say the least. So much to say so little time and for some reason I was a bundle of nerves. We plan on hosting these once a week through the challenge. There were so many additional things I wanted to say, I thought it would be better in a blog post.<br />

<b>Paleo Challenge Ready!</b><br />

<b>1. Meal Plan</b><br />
The first thing I did was meal plan for the week. This seems easy enough but it does take a minute to take a peek at your families schedule, what's on sale, and bring it all together. We generally use <a href="http://www.emeals.com/" target="_blank">Emeals </a>for meal planning but don't always use 100% of what they offer for the week. I also know it's important to think through what I want for lunch too. After dinner we almost always have leftovers but as the boys get older that's not always 100% guarantee. I have 3 lbs of burger thawing for dinner tonight. That was the only way I knew I'd have leftovers for tomorrows lunch. I post our meal plan on the refrigerator so my family knows what to expect. I then make my grocery list for the week.<br />

<b>2. Clean it out</b><br />
I started with my refrigerator. Luckily, I had time and made it a priority on Saturday morning to work on getting paleo ready. So this time I took everything out and cleaned all the shelves and drawers so that we could start fresh. I only put things back in the refrigerator that were paleo friendly or that my kids would consume in the next 30 days. Then I moved on to my pantry which was for the most part ready to go. Just a little reorganization wiping down shelves and it was ready to go. When we did our first paleo challenge I also took things like canola oil, vegetable oil, sugar, flour, etc and put it in the back of a cabinet I don't use often. Once we adopted the lifestyle long term, I gave it away to a friend. When your kitchen is organized and ready to go following this lifestyle is easier.<br />
<br />
<b>3. Paleo Shopping</b><br />
With my grocery list on hand, I headed to the grocery store. I've come a long way in paleo grocery shopping. I remember in the beginning my shopping trips took me entirely too long. Some of that is because I didn't know where to find things and another part is I needed to look up what some fruits and vegetables looked like. Pre paleo I had never bought leeks, parsnips, spaghetti squash, butternut squash, bok choy, etc. I would literally be standing in the produce section googling pictures of things on my list.<br />
<br />
<b>4. Washing and prepping</b><br />
I think this part is so important. I've heard many times from people that they found the prep and even cooking things ahead a time a valuable lesson for the paleo journey. Sometimes Mr. and I will refer to this as a cooking WOD (workout of they day). This weekend I washed all my fruits and put them in bowls at eye level. With my kids being home all summer, my goal is when they reach into the fridge it's easy to pull out a snack so they don't go on the hunt for junk or something unhealthy. Mr. also grilled a family package of chicken thighs for us to have for lunch and snacks this week. <br />

<b>5. Condiments ready</b><br />
We also spend our cooking WOD time getting condiments ready. <a href="http://meljoulwan.com/2010/06/03/the-secret-to-homemade-mayo-patience/" target="_blank">Paleo mayo</a> was made for our burger bar tonight but we've also been know to whip up a batch of <a href="http://againstallgrain.com/2016/02/18/paleo-ketchup-recipe/" target="_blank">paleo ketchup</a> or barbeque sauce as we are getting ready for the week.<br />

<b>6. Grab and go breakfast</b><br />
Since you'll likely kick off your paleo challenge with breakfast, it's my experience that you make this as easy as possible. There are lots of great paleo egg casseroles just a google search away. Some of our challengers will make egg mixture in muffin tins so they can pre package them for the week. It makes getting out the door and kicking off your challenge easier if you aren't used to eating a hot breakfast.<br />
<br />
<b>7. Lunch ready</b><br />
After we're done with dinner every night and are cleaning up I package our leftovers for lunch the next day. In the morning, the process getting out the door is simpler because we can just grab our leftovers for lunch and head out the door. We have some challengers that make soup or paleo pizza casserole and they eat that for lunch all week. I like this idea because they use their cooking prep time to prepare, cook, and package their lunches for the upcoming week.<br />

<b>8. Dinner Prep the night before.</b><br />
As time allows, I like to do as much dinner prep as I can the night before. Sometimes that just mean getting the meat out of the freezer to thaw. Other times, I'm able to cut up veggies or precook meat. Whatever I can do to make the process simpler for the evening meal, I do.<br />

I am going to be totally honest and say that I love challenges! I love challenges because I tend to be competitive. Plus it gives me more purpose on my journey. This challenge has been pretty gentle. Our first week we started by journaling. I've been tracking my sleep, food, water, and movement. This has been good for me in keeping me accountable to what I put in my mouth. <br />

Our second week we committed to 3x per week of exercise. To be honest it was a great motivating factor when I wanted to hit snooze on the alarm last Wednesday. I love getting my workouts in during the early mornings but I sure don't like getting out of bed for them.<br />

This week we've cut sugar. (duhn, duhn, duhn) For me this won't be any where near the first time. Sugar for the most part is out for me already. I will miss that glass of wine or three of red wine the most.<br />

Breakfast cups:<br />
1 lb of sausage or chorizo (your choice)<br />
1/2 onion<br />
12 eggs<br />
1 sweet potato<br />
Spinach (optional)-I used a handful.<br />
1 tsp onion powder<br />
1 tsp garlic powder<br />
2 Tbsp Siracha<br />
Salt & pepper to taste<br />
Directions: Preheat oven to 375. Cook sausage and onion until browned. In a bowl scramble 12 eggs and add onion powder, garlic powder, Siracha, and salt & pepper. Add cooked sausage and onion. Mix ingredients. Use ice cream scoop to add egg mixture to coconut oil coated muffin pan. Bake for 20-25 minutes.<br />

Turkey-Apple-Bacon Wraps with honey mustard with/Mint Honeydew Melon Salad:<br />
Wraps:<br />
1-12 oz pkg nitrate free bacon<br />
1/4 cup Organic Mayo (or homemade Paleo Mayo)<br />
2 Tbsp Dijon Mustard<br />
1 Tbsp raw Honey<br />
3/4 lb sliced roasted turkey<br />
1 apple, thinly sliced<br />
Directions: Cook bacon, in batches, in a large skillet over medium heat until crisp. Combine mayo, mustard, honey. Stack turkey slices in 8 piles on a flat work surface. Top turkey evenly with honey mustard, bacon, and apple slices. Roll up and secure with toothpicks.<br />

Melon Salad:<br />
2 cups Honeydew Melon Salad<br />
1/4 cup torn fresh mint<br />
2 Tbsp Fresh lemon juice<br />
1 Tbsp raw honey<br />
Directions: Combine melon, mint, lemon juice, and honey; toss to coat.<br />

Tex-Mex Slow Cooker Chuck Roast<br />
2 1/2 lb boneless chuck roast, trimmed<br />
1 1/2 Tbsp chili powder<br />
1 tsp salt, 1 tsp pepper<br />
1 medium onion, thinly sliced<br />
1 cup fresh orange juice<br />
1 3/4 cup Organic chicken broth<br />
Directions: Rub roast all over with chili powder, salt and pepper. Place onion in bottom of slow cooker. Place chuck roast over onion. Pour orange juice and broth around roast. Cover and cook on low for 6 to 8 hours or until roast is very tender.<br />

Jicama, Peach, and Avocado Salad<br />
1 large jicama, peeled and shredded<br />
2 ripe peaches, pitted and chopped<br />
1 jalepano pepper, seeded and chopped<br />
2 Tbsp Fresh lime juice<br />
1 Tbsp extra virgin olive oil<br />
1/2 tsp salt, 1/4 tsp pepper<br />
1 ripe avocado<br />
Directions: Combine jicama, peaches, jalapeño, lime juice, oil, salt and pepper in a bowl; toss well to combine. Chill salad. Stir in avocado just before serving.<br />

Plus I got to meal plan and shop for the week for my own first week back to school. Using <a href="http://www.emeals.com/" target="_blank">emeals</a> has cut the time I spend meal planning down by hours. I simply go to my phone and use the emeals app to pull up the menu and grocery list for the week. I am in love with a new feature on the <a href="http://www.emeals.com/" target="_blank">emeals</a> app. I'm not the biggest fan of cooking seafood at home especially indoors during the winter. So the new feature allows me to replace it with one of my favorites from prior weeks AND updates my shopping list reflecting the change! <br />

When we picked up Mr's packet for his race the next day we headed to Texas Roadhouse. This is my favorite Paleo meal out. Salad, prime rib and sweet potato. It hit the spot that evening.<br />

I picked up a sale slab of Spare Ribs on my shopping venture and used my new Instant Pot for the 3rd time. I can't wait to continue to use it more and more but for now I've got the ribs down pat!<br />

How do I stay Paleo during this busy time? PLANNING!!! I pack snacks with me wherever I go so I know I won't be hungry before my next meal. I use <a href="http://emeals.com/" target="_blank">emeals</a> for my dinner plans and adjust the menu based on our activity level that night. When I come home from the grocery I chop up celery and carrots for snacks during the week. This week I made 2 extra meals that didn't get cooked last week and that has ensured us plenty of leftovers. <br />
