Hi to our new readers from WISH TV 8!  We are glad to have you and are excited you are interested to know about how a Paleo Lifestyle can improve your lifestyle!  In less than a year Mr. and I have gone from this:

I started blogging about our experience when we started to see and feel the dramatic results.  I often say that food is a drug, a phrase that I stole off of Coach Sam from Crossfit Seymour.  Since starting the Paleo lifestyle my face cleared up from adult acne within a week.  I saw significant change in my blood work numbers done every October.  My monthly cycles regulated after years of PCOS (poly cystic ovarian syndrome).  My energy level went way up after the first couple of weeks of detox.  Mr. and I live a much different lifestyle than we did a year ago.  We've been able to do little things that were before burdensome like walking up and down stairs, household chores, and being active with the boys.

This is Mr. and I 30 days into Paleo.  We felt so much better but still had a long way to go!
I think overall meal planning has been one of the most important parts of our successful journey.  If you don't like to cook, in order to follow a Paleo lifestyle, you will need to learn to love it or at least tolerate it.  That is why we have found Emeals so helpful.  Our SAD (Standard Amercian Diet) before wasn't Paleo friendly.  So I had to start fresh.  It takes so much time to scour cookbooks, Pinterest, and online blogs to find paleo friendly recipes.  That's when I remembered and looked into emeals.  A major contributor to our success has been the ease of using Paleo Emeals.  I've shared more about that here: Paleo Meal Planning for Beginners

One of the biggest struggles of our Paleo Journey has been getting our kids on board.  They are not 100% Paleo yet.  But they do eat what we have for dinner and are given the option of healthy snacks during the day.  They are starting to understand the impact that food has on their body.  When we visit friends or family that aren't Paleo and they gorge themselves on things they shouldn't, often times it prompts a conversation.  So I've also written a post to get kids on the Paleo track: Paleo for Kids!

Through blogging I was able to share a secret that I had been keeping close to my heart.  As a result of the Paleo Journey, I was able to overcome a big obstacle in my life: My secret (They Symbol of My Ring)


On the WISH TV Segment today Mr. and I were preparing Emeals Southwest Burgers with Guacamole and Grilled squash and bell peppers.  As promised here is the recipes for this Paleo Meal:
Southwest Burgers with Guacamole
Ingredients:
2 lb grass-fed ground beef
2 Tbsp chopped fresh cilantro, divided
1 Tbsp Southwest seasoning
3/4 tsp garlic salt
1 tsp pepper, divided
1 Tbsp Coconut Oil, melted
2 ripe avocados
1 lime, juiced
1 tsp garlic powder
1 head iceberg lettuce, leaved separated (I used green leaf lettuce)
Directions:
Preheat grill to medium-high heat.  Combine beef, 1 Tbsp cilantro, Southwest seasoning, garlic salt and 1/2 tsp pepper in a large bowl; mix just until blended.  Shape beef mixture into 6 equal patties. Place patties on grill rack rubbed with oil.  Grill, covered with grill lid, 6 minutes per side or until no longer pink and a thermometer reads 165 degrees.  Peel avocados, and mash with a fork until chunky.  Add lime juice, garlic powder, remaining 1 Tbsp cilantro and 1/2 tsp pepper.  Mix well.  Assemble burgers with lettuce leaves (as a bun), patties and guacamole.

Grilled Squash and Bell Peppers
Ingredients:
3 yellow squash, sliced into 1/2 inch thick rounds
2 zucchini, sliced into 1/2 inch thick rounds
2 red bell peppers, sliced into 1 inch pieces
2 Tbsp coconut oil, melted
2 cloves garlic, thinly sliced
1 Tbsp chopped oregano
1 tsp salt
1 tsp lemon pepper
Directions:
Preheat grill to medium-high.  Combine squash, zucchini, bell peppers, oil, garlic and oregano in large bowl.  Grill 4 minutes per side or until tender.  Sprinkle with salt and lemon pepper.  *If desired, use a grill basket to make grilling vegetable easier.  (that's what we did)

Prepping for surgery...Paleo Style++Paleo Chicken Carnitas

I've been dealing with a nagging shoulder injury for almost a year.  I can't put my finger on a moment the injury happened which is frustrating and had me wondering if it was mental.  At the beginning of January I opted for an MRI which indeed indicated that I have a 50% torn rotators cuff and my surgeon is pretty certain I have a SLAP tear as well.  I was so relieved to know this information but also shocked to hear the recovery after surgery.  Last week after scheduling the MRI, I've had 2 weeks to do as much preparation as I can.  I've been grinding it out at home and at work so that the transition can go as smooth possible. At home I've been cleaning, organizing and meal prepping.  Luckily Mr. is a phenomenal caretaker and I know that he will do fine but I'm trying to lighten the load for him as much as possible.  I plan on doing additional meal prepping this weekend. Paleo Intermittent Fasting--Emeals Paleo Bacon Turkey Meatloaf Recipe included!

At a recent appointment with my favorite Integrative Medicine Physician, Mr. and I were able to lay it out all on the line and learned how to refocus on our health journey.  Dr. W knows of how successful we've been with changing to a Paleo Lifestyle.  He saw us through it every step of the way last time.  So he asked us (individually) what we knew about Intermittent Fasting.  Admittedly, Mr. and I knew very little and probably still don't know much but Dr. W assures us he's super impressed with what he's seen come from research and thought we'd be perfect candidates.
