I HEART EGGS!

Pre paleo, I was not a breakfast eater.  I would go in spurts but a bowl of cereal or a cup of yogurt were about as much as I ever thought of regarding breakfast.  I am not a morning person either, so many days I would be running too late for breakfast.  

Then came Paleo.  As I was learning how to navigate the lifestyle I was already tired of eggs.  I didn't love eggs.  I promise I've been trying to avoid loving them but something happened to me in the last 6 months and it's time that I come clean. 

I love eggs!  I look forward to them every morning. Sometimes at night I think about how I will make them the next day!

So now that it's out there, let me tell you how I learned to love them.  Every day I try and fix them a different way and I rotate through the week.  Fried hard, Fried Soft, Scrambled, Scrambled with Veggies are on constant rotation at my house.  Then I try to switch up what I have with them.  Different fruits on the side, leftover veggies, Sweet Potato Hash browns on the weekends, but my favorite side is Avocado (I HEART Avocado, but that is a different post for a different day).  A pretty consistent constant with my eggs is bacon.  I am not a huge sausage lover but I do love me some bacon.  

Another huge difference for me in the egg category is buying farm fresh eggs.  There is a huge difference between the eggs you see in the store and the eggs you can get from a farmer.  If you put a store bought egg and farmers egg cracked in a bowl you would be surprised how different they look, even on the inside.  We are working on finding another source for our farm fresh eggs.  We've been eating store bought for a couple weeks now and I miss my farm eggs.

for the week will make breakfast that much simpler in the a.m.

It's so yummy to cook with for other meals.
Tonight I'm using it instead of oil for my brussel sprouts.

Fry up your veggies in the remaining grease.

In my humble opinion you have to eat breakfast when you choose the paleo lifestyle.  Again it takes some prep and planning but it will help get your body fueled for the day and keep you blood sugar levels steady.  I'm still not a morning person.  I had been working out in the morning but since I've gotten back from my trip I've found it more difficult to get up in the morning.  I made it this morning to the gym though and it felt good for that routine to return.  So truth be told, Mr. has been making my breakfast in the morning for several weeks.  It was nice to be able to come home and get everything ready for him this morning for a change.

So...if you are headed down the Paleo journey, give eggs a chance.  You just might find that you actually do love them more than you ever thought possible.

Prepping for surgery...Paleo Style++Paleo Chicken Carnitas

I've been dealing with a nagging shoulder injury for almost a year.  I can't put my finger on a moment the injury happened which is frustrating and had me wondering if it was mental.  At the beginning of January I opted for an MRI which indeed indicated that I have a 50% torn rotators cuff and my surgeon is pretty certain I have a SLAP tear as well.  I was so relieved to know this information but also shocked to hear the recovery after surgery.  Last week after scheduling the MRI, I've had 2 weeks to do as much preparation as I can.  I've been grinding it out at home and at work so that the transition can go as smooth possible. At home I've been cleaning, organizing and meal prepping.  Luckily Mr. is a phenomenal caretaker and I know that he will do fine but I'm trying to lighten the load for him as much as possible.  I plan on doing additional meal prepping this weekend.
