A Month in Review 3.14

March has been an exciting month for us.  A full month of blogging under our belts and we are excited and encouraged by how many people have visited our blog.  It's so humbling to be able to help people begin their own journeys to health. April is an extremely busy month at my full time job so my goal is to blog at least twice a week.  If that isn't enough for you, join us on Facebook where I always post our evening meal! Paleo is Simple!

I've been bombarded with friends and strangers asking questions about Paleo.  I am excited that so many people are excited to try the lifestyle and see if it can help them the way it has helped Mr. and I.  I thought a post to answer some of the questions I am getting along with some additional information was in order. Don't over think Paleo! It's really pretty simple.  Fruits and Vegetables(Organic when possible), Grass Fed Beef (if possible), Nuts and Seeds. Paleo Food Pyramid My typical breakfast includes bacon, eggs, and fruit or avocado.  To add variety I cook my eggs a different way every day.  I usually rotate between fried soft, fried hard, and scrambled eggs with red onion, red, pepper, mushrooms, and spinach.  My breakfast usually looks like this: Paleo Breakfast I don't count or measure anything.  We buy our eggs from local farmers.  They are so much better than store bought PERIOD.  I usually gauge how hungry I am by how many eggs I make.  So

Mr's 75# weight loss

What a crazy ride the last 8 and 1/2 months has been. My weight loss has slowed down the last several months and I actually gained some weight back at one point. I could see improvements in the mirror and could tell a difference in how my clothes fit but was frustrated in the scales not showing the same results. I was told by more than 1 coach at my local box (crossfit gym) that this would happen, it happens to everyone, and not get brought down by it. So, when I had a 3 week slump last October I went and had measurements taken and my body fat established (I should have done this back in August). This Past October I was 248 pounds and had 29.1% body fat. Last week I went and had my measurements taken and my body fat reestablished. My Weight was down 32 pounds, body fat was down to 18.8%, and had lost 20-1/4"s in a 20 week period of time. As of Ash Wednesday (March 5) I was still at the same weight I was on February 9th. These pictures really need no words.  But I can't help myself...tomorrow Emeals.com is doing a blog spot on Mr. and I's lifestyle change for Transformation Tuesday.  They had requested 'after' photos of us.  Luckily, we have a friend with a good eye and she used my camera to snap a few shots.  Although I didn't take before measurements looking at these photos side by side helps me appreciate where I was and how far I have come.  This year we will be taking our 'got there' photos!  Until then there's work to be done....
