Made it through the weekend +Monday +almost Tuesday

What a fun busy weekend.

First to update about how I did at the wedding.  This is 'my person' Deanna.  She's waited very so patiently to find the soul God intended for her.  I'm so happy for her and Nate and can't wait to hear all about their life adventures.  So in my post Saturday morning I had everything mapped out.  I was going to eat a quick lunch before I left for the wedding.  I was packing snacks to have in the car.



Well, I quickly had to come up with a Plan B.  When I came downstairs after getting ready, Mr. told me how beautiful I looked but my kiddo insisted I needed to change.  (He will give me a complex some day).  I ended up leaving without eating OR packing a single snack or water only my coffee!  I of course didn't realize it until I was have way into my 90 min. drive.  Luckily I arrived early and good thing too because I needed to stop and get a card.  CVS had larabar's on a "deal" 3 for $4.50 so I bought three (2 blueberry, 1 apple pie) along with a bottle of water.  On the way to the church I ate 1 lara bar, then on the way to the reception (30 miles away) I had another larabar.  Luckily, at the reception they had a vegetables for an appetizer and this was dinner!  Success!


I had my last larabar on my way home that night after resisting alcohol and cake!  I stopped at a Starbucks and picked up an iced tea to help get me home.

Sunday morning we were late for church and decided since we needed to head north anyway to go to church up there.  So for breakfast 2 eggs and steak with bullet proof coffee.  Lunch was late and we ate out.  I had steak again with a salad.  Dinner was a meeting I held for work: I had chicken wings, salad, burger (no bun), and a baked potato.

Monday was a busy day too.  The boys are switching seasons and we officially started basketball practices.  Breakfast 2 eggs, 1 bacon, 1/2 avocado and bullet proof coffee.  Snack: Carrots  Lunch: leftover caulirice and chicken fajitas, Snack: Celery Dinner: Paleo Kung Pao with Bok Choy Late snack: Apple  

Today is another busy day and Mr. is out of town working.  Plus Go Cubs!
Breakfast: 2 eggs, 1 bacon, 1/2 avocado bulletproof coffee
Snack: None
Lunch: Salad, pork chops
Snack: carrots and grapes
Dinner: Meatball mushroom soup with zucchini ribbons

Day 9 and going strong!

Paleo is Simple!

I've been bombarded with friends and strangers asking questions about Paleo.  I am excited that so many people are excited to try the lifestyle and see if it can help them the way it has helped Mr. and I.  I thought a post to answer some of the questions I am getting along with some additional information was in order. Don't over think Paleo! It's really pretty simple.  Fruits and Vegetables(Organic when possible), Grass Fed Beef (if possible), Nuts and Seeds. Paleo Food Pyramid My typical breakfast includes bacon, eggs, and fruit or avocado.  To add variety I cook my eggs a different way every day.  I usually rotate between fried soft, fried hard, and scrambled eggs with red onion, red, pepper, mushrooms, and spinach.  My breakfast usually looks like this: Paleo Breakfast I don't count or measure anything.  We buy our eggs from local farmers.  They are so much better than store bought PERIOD.  I usually gauge how hungry I am ...

I HEART EGGS!

Pre paleo, I was not a breakfast eater.  I would go in spurts but a bowl of cereal or a cup of yogurt were about as much as I ever thought of regarding breakfast.  I am not a morning person either, so many days I would be running too late for breakfast.   Then came Paleo.  As I was learning how to navigate the lifestyle I was already tired of eggs.  I didn't love eggs.  I promise I've been trying to avoid loving them but something happened to me in the last 6 months and it's time that I come clean.  I love eggs!  I look forward to them every morning. Sometimes at night I think about how I will make them the next day! Woo...that feels better.
