A New Homecoming Day!


Our kiddos were born at 29 weeks and 2 days.  G money only weighed 2 lb 4 oz and Smooth E weighed 2 lb 10 oz.  They spent 7 weeks and 2 days in the NICU.  Luckily they both got to come home together and we celebrate Homecoming Day every year.  We started the tradition when they were 1 by taking them to Chuck E Cheese for our annual celebration.  Last night we headed there to follow tradition.  This year was a New Homecoming type of day though.  In the past I've taken my coupons and we've gotten as much pizza and soda we could get while sticking to our budget.  But this year was different since we've been following Paleo and the boys were both good with the changes.  This year we took our coupons for coins only and then headed to Texas Roadhouse for dinner.  Here are a couple of pics of the boys with their tickets.  Sorry for the blury pictures!

We've not eaten out very often since starting our Paleo Journey but last night at Texas Roadhouse it was easy to stay the course.  I had a salad without cheese or croutons and a prime rib with a baked sweet potato.  It was really good.  My husband and I requested fresh horshradish and we mixed it in with our au jus which made the perfect spicy dipping sauce.  I will have to remember that for home.  My favorite part was that we had gift cards from the Christmas before last and we spend no money out of pocket but even if we had or meals was only 14.99 which was fair for the amount of food we had.  We both were able to steer clear of the rolls which wasn't as difficult as I thought it may be.  After dinner we took the boys to a local ice skating rink to tire them out for the night.  It definitely was a New Homecoming Day but I've heard both kids mention they had fun last night today.

Today was my grocery shopping trip.  Because of my extended trip it had been a while since I had done the shopping.  My circut of stores are Aldi where I buy milk for the boys, eggs if not available from a local farm, nuts, produce (love that they now carry organic), and occasionally meat (have been advertising grass fed).  Then I head to JayC to pick up harder to get produce that I can get at Aldi's, spices, seafood, some meat, cocunut milk and organic.  Living in a small town it's harder for me to locate certain things.  This week I couldn't get a Fennel Bulb or Thai Chili Paste both of which were called for on EMeals this week.  This is when I get the most frustrated at grocery shopping.  Lastly, although this week Mr. did it for me, I head to a local butcher, Darlage Custom Meats for the majority of my pork and beef needs.  The good thing is I am set until next week.  I love that I have everything I need on hand and don't have to make a bunch of multiple runs to the store.  Looking forward to sharing some yummy eats with you!  Tonight dinner was yummy.  Steaks, Bok Choy, and Roasted Tomatoes.

I love the roasted tomatoes.  I cut roma tomatoes in half length wise.  Then I mince 2 or 3 cloves of garlic.  I put tomatoes in dish face up and sprinkle with garlic.  Drizzle with olive oil (tonight I used EVOO). Season to taste with Italian Seasoning.  I roasted these on 350 for about 30 min.  The boys love them as do I.  They remind you of pizza sauce.  Plus my plate of 3 things looks happy :)

Mr. and I started our Paleo Journey pretty much together.  I can't say that it was a smooth beginning.  We definitely have learned a lot through the process and continue to do so.  Here's a quick list of 10 things you should know when starting the Paleo Journey as a Couple!   1. Fueling Your Body

The owner of our local gym, Crossfit Seymour, is who uses the term, "Food is a Drug."  I started using it on here because I realized how true it was in my own body.  As I adjusted to the Paleo lifestyle and Crossfit too I could feel the difference in my energy level, inflammation, and overall wellness almost immediately! Last week was my kiddos spring break.  We usually head south to a warmer climate but decided to have the ever trendy 'staycation.'  We did one fun thing each day to keep the week exciting.  While all that fun was being had I had several moments of weakness.
