58 Days to go....I am strong! +Emeals Recipe Share

58 days to go until I've been Paleo Crossfit for 1 year!  I feel strong today...with will power that is.  I feel no need to have my Paleo cheats.  Maybe I've done a quick detox of yummy chocolate or maybe I'm too stressed to think about it.  I'd love to report back that last nights run melted all my anxiety...but it didn't.  I did take the time to really count my blessings and thank God for all that he has given me and our family.  It's hard to understand why and how things happen sometimes but standing on Faith is important and that is what I choose to do.  So when I woke up this morning I was determined to stick with the plan that I outlined a couple of days ago...and that's just was I did!  That's why I feel strong!

Emeals Tuscan Pot Roast with Roasted Broccoli
Emeals Tuscan Pot Roast
2 Tbsp coconut oil
1 large onion, chopped
1/2 lb carrots, chopped
4 cloves garlic, minced
1 8 oz pkg of sliced mushrooms
3 Tbsp Balsamic Vinegar
3 Tbsp coconut amino soy-free sauce
1 (14.5 oz) can of organic chicken broth
2 Tbsp Italian Seasoning
3 lb beef chuck roast

Heat oil in a skillet over medium-high heat.  Add onion, carrots, garlic and mushrooms to skillet; cook 6 minutes or until onion mixture is tender, stirring constantly.  Combine onion mixture, vinegar, coconut aminos, broth and Italian seasoning in a 6 quart slow cooker; stir well.  Add chuck roast to slow cooker.  Cover, and cook on low 6 hours.

Emeals Roasted Broccoli
1 Tbsp coconut oil, melted
1 Tbsp balsamic vinegar
1 Tbsp fresh lemon juice
1 tsp raw honey
1/4 tsp salt
2 cloves garlic, mince
1 (2lb) head broccoli, cut into florets
2 Tbsp sliced almonds

Preheat oven to 400 degrees.  Wisk together oil, vinegar, lemon juice, honey, salt and garlic; pour over broccoli mixture in a single layer on a baking sheet.  Bake 20 minutes.  Stir in almonds, bake 5 minutes longer.


My last run left me with blisters on my heels....so I took a picture for proof that I did my run last night.  Boy did that hurt!

Mr. and I started our Paleo Journey pretty much together.  I can't say that it was a smooth beginning.  We definitely have learned a lot through the process and continue to do so.  Here's a quick list of 10 things you should know when starting the Paleo Journey as a Couple!   1. Fueling Your Body

The owner of our local gym, Crossfit Seymour, is who uses the term, "Food is a Drug."  I started using it on here because I realized how true it was in my own body.  As I adjusted to the Paleo lifestyle and Crossfit too I could feel the difference in my energy level, inflammation, and overall wellness almost immediately! Last week was my kiddos spring break.  We usually head south to a warmer climate but decided to have the ever trendy 'staycation.'  We did one fun thing each day to keep the week exciting.  While all that fun was being had I had several moments of weakness.
